Vitis Vinifera Etrusca, Dies Canicolares, days of the darkening color. Defined as “ a most beautiful grape for keeping. A wine to go with the great dishes of Tuscan cuisine. A typical Tuscan vine. Produced exclusively with grapes from our own vineyards, without the use of selected yeasts or enzymes. Serve in the decanter at 18-20°C.
Produced 100% with canaiolo grapes, the maximum expression of this terroir. A powerful and elegant mono- grape wine, of excellent breeding.

from 5 to 40 years
Harvest
done by hand, starting on 22nd September.
Vinification and Time of First Fermentation
15-18 days in 18 and 38hl. vats with daily airing by pumping the must, without the use of yeasts or enzymes.
Aging and maturation
12 months in oak barriques.

After the end of the second winter following the grape harvest.
