Climate change of the year
Climate change in the 2014 year has been one of the most anomalous in recent years. Winter was mild and spring was less rainy than before. The growth started between the end of March and the beginning of April was regular. The abundant blooming began in early June. The summer recorded temperatures well below the average, and frequent rainfall. This situation delayed the invading of the grapes until the second half of August. September, quite warm but characterized by significant temperature changes between day and night that have favored the accumulation of polyphenols in the skins.
The harvest of Chardonnay began on the first of September. The wine grapes, which are not yet fully ripe, give Sindrada an attractive acidity that makes it also appreciate as an aperitif.
Vinification: Diraspapimentation of grapes. Short film maceration. Soft pressure. Alcoholic fermentation at a controlled temperature of 18oC. Malonate fermentation does not occur.
